Allow us to tantalise you with high-quality ingredients locally-sourced from Malta’s verdant fields and seaside villages – we invite you to join us on a culinary journey of unparalleled flavours for a fine dining experience that brings a fresh, new concept to the island. At Tarragon we take a sustainable approach when creating the most surprising dishes. Using the freshest catches from the Mediterranean, locally-grown farm animals and seasonal produce where possible, our ingredients are as close to zero-kilometre as you can get. The end result? Creations that are replete with genuine flavours and that give new meaning to the phrase ‘fine dining’.

Tarragon is synonymous with an eclectic cuisine that finds much inspiration in the sea that surrounds us. Half of our secret lies in the locally-sourced, genuine ingredients that we lovingly gather from fisherman, farmer and field, and from the small food markets that grace the corners of our villages.

The other half lies in the passion and inventiveness of our team. Guided by Chef Patron Marvin and his unerring instinct for bringing together ingredients that create the most delectable flavours, they worked on a menu that turns the concept of fine dining into something truly special.

Whichever the main ingredients they are working with – the tenderest meats, succulent fish, delicate poultry, flavourful veg, a light dessert – the end result is one that will surprise the tastebuds into pure pleasure.

The right wines to exalt every single flavour in our dishes. This is what we have worked to achieve with the Tarragon wine list, in a way that also complements our sustainable approach to fine dining.

Here, we put the spotlight on Maltese labels and on other, smaller vintners from around the world to discover wines that are produced with passion by artesans.

Of course, we also offer you your favourite, more renowned labels, the wines that have earned themselves a place in the spotlight of most famous vintages. With every bottle we take you on a journey that spans across the Mediterranean, France, Italy, Lebanon, Portugal, South Africa and more.
