As you browse through our menu, you can rest easy in the knowledge that we have left no stone unturned when sourcing the best local ingredients for our dishes. That fresh bream you’re eyeing? Bought that same day directly from our local fishermen, right when they were bringing in the fresh catch of the day. The sundried tomatoes that make the other flavours pop? Grown in a sunny field a few kilometres away from our restaurant. 

Tarragon chef patron Marvin Gauci prides himself on having the best contacts to help him source the best local ingredients – from the Southernmost tip of Marsascala, to the salt-pans in St Paul’s Bay. 

This passion for a local accent is something that can be tasted in every dish prepared by Tarragon’s kitchen.With an almost zero-kilometre approach to sustainable dining, the award-winning Tarragon is simply in a class of its own.

When Marvin Gauci, the heart and brain behind Tarragon and a host of other unique restaurants, turned 13, he had his first brush with the world of culinary hospitality. And, since then, he hasn’t looked back.

And, through all his years studying at the Institute for Tourism Studies (ITS), he knew there was only one place he wanted to be – the kitchen of a bustling restaurant, serving happy guests. Successful stints abroad followed, but the first real landmark moment was when Marvin opened his first restaurant in Xemxija, Wild Thyme.

The first incarnation of Tarragon, the restaurant was wildly successful and paved the way for the opening of the actual Tarragon in St Paul’s Bay, in 2007. Since that day, Marvin has not looked back as this gorgeous foray into fine dining led to the opening of myriad other dining concepts that are unique to Malta. From Dinner in the Sky to Buddhamann, Caviar and Bull and Susurrus, the firmament of stars that are Marvin Gauci restaurants are nothing if not shiny. And that includes his launches in Budapest. 

Now, Marvin is taking Tarragon on a new journey with a sustainable concept that places a Maltese Accent on fine dining. Join him, and be prepared for an unparalleled experience.
